Honey is one of the most valuable natural products, with unique characteristics that vary depending on its botanical and geographical origin. In recent years, the identification of MGO (Methylglyoxal), a compound associated with the particular antimicrobial properties of certain types of honey, such as Manuka honey, has attracted particular interest.
What is MGO?
Methylglyoxal (MGO) is a natural organic compound formed in honey through the conversion of dihydroxyacetone (DHA), which is found in the nectar of certain plants. Its concentration is used internationally as a key indicator for assessing the quality and bioactivity of certain honeys.
The higher the MGO content, the greater the antimicrobial potential of honey. For this reason, measuring this compound is a critical tool for producers, exporters, traders and standardization companies who wish to document the value of their products.

The challenge of analysis

For this reason, only a limited number of laboratories have the ability to reliably perform this measurement.
